Did you know that cheese has a season? And with winter upon us, it's time for the rich milk of hay-fed animals to shine in cheeses beloved in France's mountain regions: Think bark-wrapped Vacherin with its woodsy aroma and gooey interior or long-aged tommes meant to savor through cold months when for centuries, there was little else to eat. Discover these and other seasonal marvels over the course of a two-hour workshop with cheese expert Emily Monaco. You'll learn all about the stories behind five winter specialties and enjoy the perfect wines to pair.

About the Instructor:

Born and raised in New York City, Emily Monaco has been living in France since 2007. An Academy of Cheese Associate, international cheese judge, and die-hard cheese lover, she works as a journalist covering cheese (and other tasty specialties) for publications including Atlas Obscura and the BBC.
