Take a trip through time and learn about the winding and improbable history of the 'Food of the Gods,' as it made its way from  ancient Mexico to the European royalty, and eventually into nearly every household in the modern world. We will discuss chocolate's fascinating metamorphosis, including the modern machines and processes that have made it possible to produce for daily consumption.  Then, thanks to your personal chocolate tasting kit that will be sent to your home, enjoy an in-depth chocolate tasting lesson and experience with 4 distinct single origin chocolate mini-tablettes.

Your host & chocolatier Chef Lisa Allen will help you to fine-tune your own sensory responses to high quality chocolate, and describe your responses, much as you would do with fine wines.  There will also be plenty of time for Q&A between the presentation and at the end of the tasting.

Each participant's kit will include: A tasting guide and booklet, 4 Grand Cru mini-tablettes from Edwart Chocolatier, your own whole roasted cocoa bean, and a gift box mini-coffret of 4 signature chocolate bonbons from Edwart.

Be sure to indicate any food allergies at the time of registration (dairy, nuts or gluten especially.)

Registration must be completed 10 days in advance in order to receive your kit on time! Kits can only be mailed to addresses in metropolitan France. 

Registration to participate in the course without the chocolate tasting kit is also available.  Choose this option if you are living outside of France or have missed the deadline for having the chocolate mailed to you. 

Chef Lisa Arielle Allen is an American pâtissière, with an extremely sweet set of teeth! Throughout her life, she has enjoyed making surrounding lives sweeter with homemade treats. After a long, successful career as an International Arts Educator, Lisa is now fully trained in French Pastry by the esteemed Ferrandi école de gastronomie, with additional training in Michelin-starred kitchens, the Callebaut Chocolate Academy, Belloquet among others. Here in Paris she has been running Tarts & Truffles Culinary Consulting since 2017, and managing the DIY Atelier du Chocolat at Edwart Chocolatier since 2018. She is excited to share her love, passion and knowledge for French pastry and chocolate with you!
