A hamburger food truck in Paris, the land of the Chateaubriand steak?? Who’d have thunk it!  But that’s just what California born Kristin Frederick introduced in 2011 along with her husband, Fred. In this talk, Kristin will take us through the highways and byways of setting up her business in France  – finding financing, getting administrative permission, selecting locations, managing personnel, attracting customers – all hefty challenges. But with three Camion Qui Fume food trucks now serving several hundred hamburgers daily, a restaurant soon to open, and a Camion Qui Fume cookbook published, Kristin and Fred have certainly scored big time.

Instructor: As the child of two parents who worked in the restaurant industry, Kristin started her own similar career at 15, serving hot dogs in a shopping mall. Combining restaurant work with university studies and later jobs in marketing and advertising, Kristin, ever passionate about food, eventually made a  big leap to the famous Ferrandi culinary school in Paris and thence to an internship at a Michelin starred restaurant before embarking as an entrepreneur in a completely unexpected and typically American direction.
